Executive Chef: Brett Dillen
Born and raised in Texas, Chef Brett spent 32 years exploring the state’s rich food culture—from Dallas and Austin to the Hill Country town of Fredericksburg.

His philosophy is simple: “Our job is to take care of each other. When we care for our ingredients and our guests, the food takes care of itself.”
